March 31 - 2 Year Anniversary

Today I celebrate 2 years of taking back control of my career and making one of the best decisions!!!! Last year I wrote about what a difference one year makes.  Two years later I still don't regret my decision of quitting my job!  I will celebrate this day for the rest of my life.  I stood up for  myself & I haven't stopped. I gained great confidence & keep pushin on!  My great Aunt Mary use to tell my grandma & mom I would one day be the first woman president.  I don't think I will be the first woman president (Hillary will probably beat me lol), but I know I can take on anything!

The weatherman has spread rumors we are going to have 70-80 degrees this week.  All I can think about is putting on my flip flops & heading to the beach!  I sure hope that weatherman isn't lying & we are going to get some warm weather!


BARGAIN!

My parents bought me the Rachael Ray bake ware set for Christmas in 2009.  I <3 my bake ware set!!!! I use it ALL the time!  It is just the BEST bake ware.  Easy to clean up, bakes evenly, and matches the rest of my pots & pans.  I ruined my 9x9 pan....I love the 9x9 pan.

I was shopping this past weekend with my friend Cindy.  We were at Marshall's and I saw the Rachael Ray 9x9 bake ware pan sitting on an end cap.  I picked it up to check out the price.  I was SHOCKED!  $5.50!!!! Yes, $5.50!!!! I grab that pan & held on to it like my life depended on it.  The pan on Rachael Ray website is only $14.95 and worth every penny.

Breakfast Bake #2

I usually make the easy breakfast bake in a pie pan & cut it into slices. The pie pan makes 8 servings, which leaves me scrambling to figure out breakfast one day a week. I decided to try to mix up our breakfast bake a little after talking to Krystal about one of her breakfast bakes. 

Here is how I made this weeks yummy breakfast!

12 eggs
1/2 cup of milk
1 can of dice tomatoes
Package cream cheese
2 cups cheese
About 1 teaspoon red pepper flakes
Little parsley
1 teaspoon grill seasoning - grill seasoning has a garlic, salt & pepper all together
1 pound turkey sausage scrambled
Couple handfuls of spinach

Mix everything together & put in an oiled 9x13 pan.
Bake for 45 minutes on 350

In the future I will soften the cream cheese & blend in with my egg mixture. Super easy & delish!  I cut a piece for each of us to heat up at work.  This way we eat a healthy breakfast!!!!

Last weekend I was able to go spend time with Julie & her family.  It is always so nice to see her!  The time is always too short!  Hopefully I will get to go visit again in the near future!

I went to get the kids for lunch & found 2 of them hiding in the cabinet below the tv. I could hear them laughing, but couldn't see them.  The cabinet door opened a little & out popped a leg.  LOL 



 Syrena then tried to climb inside. She was a little too tall to fit all the way in.


 DINNER TIME!!!!

Taco Bell is one of the kids favorites, so we loaded up in the van & headed out.  It was super windy & raining like a mother & drove to Taco Bell.

While we are at it & dressing the entire family maybe I can convince Art he needs to wear these cute items from Old Navy. I don't think I could get those boat shoes on him EVER, but a girl can dream! 

Maybe I need to schedule summer family pictures soon!  We can all get dressed up in nautical items. I will be waiting for a phone call or text from Art protesting. :)

My poor suitcase!

Art reminded me of a funny story while taking me to the airport on Sunday.  Art was stationed in San Diego for 18 months while we were dating.  I flew down to visit him every 3-4 weeks.  I normally flew home on Monday morning bright & early.  One weekend I flew home on a Sunday evening.  We had extra time, so Art decided he was going to drive through the car wash.  Both of us forgot my suitcase was in the back of the truck.  When I arrived at the airport I yelled MY SUITCASE!!!! It was SOAKED!!!!  The suitcase was soaked, clothes, everything inside.  We laughed & laughed!  Luckily there was nothing inside that could get damaged. 

Years back at a former job I had to travel to another office to do some training.  I was dropping off my rental car & heading back to the office.  I had pulled my suitcase out of the car & put them in front of the car while I threw something away.  One of the workers got in the car to pull it forward.  They drove over top of my suitcase.  All I see is the car driving over a hump & a green suitcase come shooting out the back.  I was laughing hysterically! The car rental employees came rushing over all freaked out.  I no longer put my suitcase in front or behind the car.  I put my suitcase off to the side now.  Lesson learned!

I have had the same set of suitcases since my senior year of high school.  My set of suitcases have travel the country & still are holding up after being run over, run through a car wash, & man handled by airport baggage people.

Monday Menu

I am traveling a couple days this week for work.  I made some food ahead of time for Art.  I made him soup, bought all the fixing for a good sandwich and left some frozen bachelor food in the freezer.  This way he can pick what he wants for lunch or dinner. 

Every week I also made a breakfast bake for us.  I made it now in a pie plate.  I cut a slice for us to take every day.  We heat it up at work and have a wonderful breakfast.

Cheeseburger Soup - you can find the recipe here. In our veggie box we got some pearl potatoes.  Perfect cut them in 1/4's & throw them in the soup.

We have one frozen meal left in the freezer from when my mom was here. We might have to pull this one out.

Swiss Chard

Last year we started growing our plants from seeds during the winter.  This way when Spring time came we would have plants to put in our garden.  We decided to try something new swiss chard.  I wasn't even sure what we were going to do with it at the time. 

The next time we went to the farmers market we picked up some swiss chard to try. I made it like creamed spinach. I had bought the red swiss chard & my cream then looked pink. lol It tasted very good, so we kept buying it.

Below is a picture of some swiss chard in our garden (along with some onions & weeds) that has been growing non stop since last Spring.  We have harvested the swiss chard at least 10 times in the past year.  It thrives in the winter months in Northern California.  I still can't believe it kept growing for an entire year.  Looks like we will be having some swiss chard this weekend!
