My tip to adding Liver to your Diet!

I started adding organ meat to our diet about 4 years ago. Growing up my mom use to make liver and onions. I loved it as a kid with some ketchup.

Liver is high in vitamin A, folic acid, iron and zinc. Liver is one of the most nutrient dense organ meat with a powerful source of vitamin A. Vitamin A is extremely beneficial for reducing diseases that cause inflammation like multiple sclerosis, arthritis and Alzheimer's along with great benefits for eye health. I am always looking for ways to reduce inflammation, since I struggle with it so bad from my multiple sclerosis. 

I have fried it with bacon grease and onions, but I struggle with the texture of it. I got an idea one day to buy some liver from a local organic natural market Victoria's Natural Market in Tomball, TX. I love going to Victoria's to get my chicken bones to make bone broth, liver, local honey and various other organic local items. 




I bought some liver and took it home to grind it up. I decided to add it to meatballs the first time. No one even knew it was in there and you couldn't taste it at all! I took the remaining ground up liver and put it in little baggies to freeze. When I make anything with ground meat I will add beef or chicken liver to it. I have found beef liver really gives ground turkey a lot of flavor!

My family has no clue they are eating liver, but they are getting all the amazing benefits from the liver! I most likely wouldn't sit down to eat a plate of fried liver these days, so I can't expect my kids to eat it. I normally do not hide foods to get my family to eat them. I serve them the item and they decide if they want to eat it or not. To me adding the liver to ground meat is like adding in some extra vitamins. We all need to take vitamins, so let's add a little to what we are going to be eating.

Menu August 20

I barely did any cooking while I was at my parents compared to my weekly routine when I am home. I cook 3 meals a day when I am home. We go out to eat maybe 3-4 times a month. I will say it was really nice to have a break from meal planning and cooking, but man is it hard to get back into it. At my parents we ate at least one meal a day at the my mom's restaurant when it was open. She is a seasonal business, so she is only open Wednesday through Sunday. 

I will say I ate more hamburgers in the month I was in ND than I eat in probably a full year. Hamburgers are something that are easy to get that are paleo approved. I just have to ask for a hamburger, no bun, tomato, lettuce and no cheese when I was there. Can you believe they don't bring tomato and lettuce with every burger? I found that so crazy! Hamburgers, steak and some salads I could make a few exceptions for to stick to paleo. The rest of the foods seemed to have some type of breading on them. 

A few days before I came home I ordered some food from Amazon Fresh to be delivered to the house. Art needed some food, so I added extra stuff that I knew I would like when I got home. The first day I was home I made a menu and grocery list. I ate a lot of fried tator tots. My mom had some gluten free ones. They were so yummy and just went so well with hamburgers!!! It was time to get back on track once we were home! I had joked we were going to need to detox once we were home. G ate so much junk. There were some things I would say he couldn't have, but I tried to just take a deep breath and let my family give him some treats. It isn't every day he eats these things. Once in awhile it will be ok. 

Here is the menu I put together for this week. 

Main Dishes:

Cracklin Chicken
Salmon
Zucchini Spaghetti
Beef & Broccoli
Breakfast
Taco Salad
Sausages

We have a TON of tomatoes right now. My mom made this really good tomato salad for her salad bar. I just had to take out the cheese. 

slice cherry tomatoes in 4's
dice an avocado 
drizzle olive oil over the top of them
mince 3 cloves of garlic 
mince fresh basil
mix all together, put in fridge for a few hours and serve cold
My mom added these little mozzarella cheeses to the salad. 

Sides:

Roasted broccoli
Baked potatoes
Coleslaw
BLT salad
Tomato salad - see above
Greek salad
Roasted veggies - zucchini, carrots, tomatoes, onions, peppers

Weekly Menu July 2

One of my favorite things about holidays is the food! Summer time holiday's are all about bbq's! Grilled hamburgers, steak, potato salad, cold watermelon, chips! I am looking forward to bbq this week on the 4th of July! Almost every year we have the same tradition. We go to the inlaws to bbq and shoot off fireworks. Last year G was a little into the fireworks. I think he will be a lot more into it this year! I love sparklers! That is all I care about! Give me a box of sparklers and that is 4th of July to me!

Main Dishes:

Hamburgers
Sausages
Buffalo Chicken Casserole
Pizza
Fish
Steaks

I will make some roasted broccoli, BLT salad, honey garlic cauliflower, baked potatoes, raw veggies with paleo ranch, and coleslaw to go with our main dishes. Easier menu this week since there is a holiday in the middle of the week and G's last week of school!

Weekly Menu June 25

I am looking forward to having a cooler week where I can actually cook this week. Last week I don't think I turned the oven on at all. If I needed to cook something it was stove top, on the grill, crock pot or we ate cold things. I was very tempted on one of the hottest days to take a walk through Costco's refrigerated section for the rest of the evening. I figured I could go sample things, walk around, go outside, back inside to the fridge, and continue this cycle until they closed. lol

Main Dishes:

It was waaaay too hot last week, so I didn't end up making the Buffalo Chicken Soup. I am going to make that this week. 

Korean Beef with Broccoli

Fajitas 

Spaghetti - I use spaghetti squash for the "noodles" and I make this sauce to put over the top. I love to make meatballs with italian sausage. Cook the meatballs in the sauce while it is cooking. I usually have plenty of leftovers for at least 2 lunches. If I don't have enough squash leftover I will put the sauce over a large bowl of spinach. While you warm it all in the microwave the spinach will cook. This is really delicious! 

I should have enough leftovers that we will have one night of random leftover dinner. Everyone can have their favorite leftover from the week!

Weekly Menu - Paleo Friendly

I mainly use coconut oil or ghee for cooking. I buy both of them at Costco in bulk. The container of coconut oil lasts me a couple months and runs about $20. I use this to cook, take my make up off, lotion, bullet proof coffee and whatever else I might need to use an oil. It does take some getting use too. Art isn't a big fan when the coconut oil flavor is prominent. I have noticed if I use salt it helps to mask the flavor a lot. I honestly don't even notice it anymore. When other people use other types of oils to cook with I don't really like them now. I can taste the difference, but the coconut flavor doesn't other me. I love chicken fried in ghee! That is just the best taste to me.

Main Dishes:

Hamburgers - I love hamburgers on the grill. I bought some butter lettuce to wrap burgers in this week.

Shepherds pie - I will try to share the recipe I use for this. I buy some frozen veggies, make my own gravy, make some mash potatoes and throw it all in my cast iron skillet in the oven.

Cracklin Chicken - if you haven't tried Nom Nom Paleo's cracklin chicken you need too!!!!!!!!!!! It's the BEST!!!! Use some ghee to fry this chicken. Ok I am craving this now!

Buffalo Chicken Soup - this is a new recipe I want to try.

Chicken Curry - I haven't made curry in ages. I usually just throw in whatever veggies we have and put it over cauliflower rice.

Sausage - This is an easy meal. Throw some sausage on the grill!

Weekly Menu - Paleo

Our menu this week is nothing fancy. Some weeks I just need something simple, easy and quick. It also depends on my mood when I am making my grocery list. If I am feeling lazy then the easy stuff gets put on the list. Apparently I was feeling extra lazy when I made this list.

Main Dishes:

Breakfast - I usually do eggs, bacon and my own version of breakfast potatoes. I will cut up potatoes and roast them. I have a paleo sausage gravy recipe to put over the potatoes I would like to try.

Pork loin - I buy these at Costco. I use my grandma's recipe for roast that is just amazing! I will have to share the recipe on here sometime in the near future.

Hot Dogs - these are my favorite hot dogs. I buy them from Amazon Fresh for $1-2 less than the price at Sprout's. These are really good flavor plus they don't have any garbage in them.

Fish - I make it different ways all the time. I will fry it with almond flour or bake it with lemons.

Pizza - I love to make this because we have lots of leftovers. It makes a big cookie sheet. There is plenty for dinner, Art's lunch, G lunch and some for the freezer. I love to have this in the freezer to grab if I need something for mine or G's lunch.

Taco Salads - I use whatever we have for this. Ground meat, cherry tomatoes, avocados, lettuce, Daiya cheese. It all depends what we have on hand and feel like eating on our taco salad. Gone are the days when Doritos use to be on top. lol I did find some plantain chips with a taco seasoning at Sprout's recently that were really good on top of the salad. I can't remember the brand of the chips. I will have to see if I can find them again.

Weekly Menu - Paleo

I try to only go grocery shopping once every two weeks. I make a list for Costco and one for the grocery store. Lately I have been using Amazon Fresh. The things I can't get at Costco I have Amazon Fresh deliver to me. Amazon Fresh does have a service charge they charge you on a monthly basis. I have been debating if I should continue with the service or not. I love that I can order $40 worth of groceries for a free delivery fee and pick when I want them delivered. I can get things from them cheaper than going to the store. Sometimes I feel I have to go to numerous stores to get things. There are certain things Sprout's carries that my regular store doesn't carry. I can get things cheaper at the regular store then Sprout's. Amazon Fresh just helps me eliminate running to 2-3 stores. You can get some great deals from Amazon Fresh too. Sometimes they offer $.25 or $1.00 items. 

I buy most of my veggies at Costco. They will last us two weeks. Things like celery, potatoes, onions, and carrots last us a lot longer. I go through usually two packs of the kale salad, cherry tomatoes, 5 heads of romaine lettuce, and cauliflower each week. There are a lot of other things I go through on a weekly basis, but those veggies are always on the list. 

Main Dishes:

Cobb Salads 
Beef & Broccoli
Tilapia Fish
Chick Fil A Chicken Nuggets
Meatballs
Enchiladas

We will have similar side dishes from last week. I have also been putting a bowl of raw veggies on the table with homemade paleo ranch dressing. G likes to dip, so this is a hit. It's also a way to get everyone to eat more veggies. If I need a crunchy snack I will grab a bowl of carrots and broccoli with ranch.

Weekly Menu - Paleo

Recently a couple people have made comments they miss my menu blog posts. I use to post them every Monday. I changed what I post on Monday's, so I stopped posting my menu. I thought I could still post my menu, but on a different day. 

I have been cooking Paleo for my family now for over a year. I do make G pasta and sandwiches. I am not tempted by either of those things. The only thing I can't resist that isn't Paleo is gummy bears. Lord have mercy if those things are in the house they are GONE! I have asked Art not to bring me any even if I am having a TERRIBLE day because I have no self control. 

At dinner I serve everyone the same meal. At times I do make something a little different for G. He doesn't like stews or soups. I no longer battle with him on those things. If I make stew or soup I just make something for G.  I get a lot of my menu ideas from Pinterest. I have a things pinned on my Paleo board that might not be Paleo standards, but I change the ingredients to thing I can have. 

I recently bought the Wahls Protocol Cooking for Life. I strayed off some of the Wahls Protocol for a month or two. I started to feel really awful again. I have gone back to following her protocol very strictly and I am feeling much better again. Potatoes and sugar are not my friend. Once in a great while I can have potatoes, but I can't make them part of my daily menu. 

I make a main dish and then pick a few side dishes to go with our main dish. I make breakfast, lunch and dinner every day of the week. Once in awhile we will go out to eat. I don't think we eat out more than 3 times a month. G and I might go to lunch with some friends once a month. The 3 of us will go out to dinner maybe twice a month. It's a rare thing we eat out.

The tortillas I make at least once a month and I make a triple batch now. We all love them! I make tacos, quesadillas, and enchiladas with the tortillas. When I make them I have to eat one as soon as they are completed. They are just delicious!  

The pizza crust I make from Juli Bauer Cookbook. It's the best crust! I make my own tomato sauce. I will put mushrooms, spinach, scrambled Italian sausage and Daiya cheese. This fixes my pizza craving every time.

Paleo Instant Pot Beef Stew

My mom makes this amazing stew that I love. It's so simple, but it's not paleo. I have been wanting to recreate it for awhile. The one ingredient I was stuck on was dry ranch dressing. Well I found a recipe online. I have been wanting ranch dressing to go with veggies too. I make this ranch dressing in double batches because we go through so much of it. I didn't take a picture of the stew from the other night because it was gone quick!

1 onion chopped
4 cloves of garlic
1 tablespoon of tapioca flour
2 pounds of stew meat
1 tsp salt
1/2 tsp pepper
2 cups of bone broth
1 tsp cumin
1.5 tbsp dry ranch dressing
1/2 small bag of baby carrots
1 small bunch of kale
4-5 small potatoes sliced

I sprinkled the tapioca flour all over my meat along with salt. I put a little oil in the bottom of my IP and turned it on sauté. I put the onion, garlic and meat in the IP to sauté for about 5 minutes. When it started to turn a light brown I turned it off. I then poured in the bone broth, cumin and dry ranch dressing. I turned it on high pressure for 30 minutes. When the timer went off I manually released the pressure. I put the veggies in the IP under high pressure for an additional 5 minutes. I manually released the pressure again.

It took about 60 minutes total to cook. It was AMAZING! We had plenty of leftovers too. The flavors were amazing! The meat was so tender it just fell apart.

You could easily make this in a crockpot. I would throw everything in the crockpot on low for about 6 hours

The flavors of this stew are just like the one my mom makes. I quickly wrote down all the ingredients I had used, so I wouldn't forget. I felt it was a very easy dinner to make. I love the IP! I love that I can throw things in there and go do something else while dinner is cooking.

Menu Monday

I am back to cooking 3 meals a day for all of us. I pack Art's breakfast and lunch for him each day. Most of the time he takes fruit and cottage cheese or fruit and eggs for breakfast. Lunch he takes a sandwich. He is starting Whole 30 today, so now the meals will change for him. My goal is to make double the food the night before, so there are leftovers for lunch the next day. 

Breakfast will be simple. Bacon and eggs. Or an egg bake with veggies. 

Here is what I have on the menu for dinner this week. 

Cuban Pork Chops
Maple Bacon Chicken
Sweet Potato Skillet
Greek Meatballs with a Greek Salad
Burrito Bowls - Cauli rice, leftover pork from the freezer, tomatoes from our garden and avocados

I usually have salad, kale, broccoli, cauliflower and cabbage on hand. I will grab other veggies I see at the farmers market that I think will go with our meals. It all just depends what is in season and they have available. 

I really like to have sauteed kale with tomatoes with my bacon and eggs for breakfast! Those flavors together are just delish!  Some mornings I will make myself a bulletproof coffee and not eat anything else. That coffee really fills me up. I use organic full fat canned coconut milk and ghee. I throw it all in the mixer and blend it for a couple seconds. It is so frothy and delicious!

Menu Monday

I am back at trying to make my menu for 2 weeks. I mostly just need to buy enough meat for 2 weeks. Then I can get my veggies at the farmers market on Saturdays. I don't buy much else from the grocery store than occasional meat or condiments we might need. 

Next week Art is going to start doing Whole 30. I don't feel there is really any difference between that and Paleo. I am going to cook what I normally eat but double the amount. That way he can have the leftovers for work. 

This week we are having the following:

Orange Chicken Thighs and Broccoli
Roast made in the InstaPot with sauteed kale - I need to make a whole blog post on the Instapot. A-mazing!!!
Lamb Kebabs - whatever veggie is left in the house we will eat with this
Garlic Honey Broccoli and Cauli Rice
Breakfast

Menu Monday

I've done really well planning out my meals for the week. We rarely eat out these days. Maybe once a week. Here is what we are eating for dinner this week.

Lentil Bolognese
Chicken & Asparagus with coconut rice
Sweet Potato and Turkey skillet
Chicken and potato soup
Honey garlic chicken
Hamburgers with homemade fries

Over the weekend I made pork fried rice. I have tried to make fried rice many time and it just doesn't turn out anything like the Chinese restaurants. Well I finally found the best recipe! The recipe doesn't call for pork, but I added some. I cut up some pork loin really small and fried it with the veggies. Then I served some garlic green beans along side of the rice. Art and George loved it! Art agreed it tasted great and asked for leftovers for work. He normally doesn't like leftovers to take to work. He is simple. He just wants a sandwich he can take with him.

Menu Monday

The past week I have been eating clean. I followed a FB group where everything was planned out for the group. It really was fabulous. The grocery list to daily menus for all 3 meals were all included. I loved it! Following this group helped me get back on track. I have been eating waaaaay too much sugar lately.

I decided to create my own weekly plan from breakfast, lunch, dinner and snacks. This way I have a plan for everything I need to eat. When I plan out what to eat I grab much better things. I also can't get over hungry or I eat junk.

I thought I would share my plan with you for the week.

MONDAY

Breakfast - overnight oats
Snack - hard boiled egg
Lunch - Salad ~ lettuce, chicken, tomatoes, walnuts, or whatever else we have around to add
Snack - Celery with nut butter
Dinner - BBQ in a jar ~ I saw this on Pinterest and thought it was adorable. I will make a roast in the crockpot, then put some coleslaw and baked beans in a jar.

TUESDAY

Breakfast - eggs ~ I like to either fry an egg, egg with kale and salsa. I make them different each time
Snack - yogurt
Lunch - chicken, veggie and rice bowl
Snack - fruit with some nuts
Dinner- Fish, sweet potatoes and green beans

WEDNESDAY

Breakfast - Eggs
Snack - Hard Boiled Egg
Lunch - Salad
Snack - Yogurt
Dinner - Burrito Bowls ~ leftover shredded pork, rice, avocado, tomatoes, salsa etc

THURSDAY

Breakfast - overnight oats
Snack - celery with nut butter
Lunch - I have a work thing, so I will get food while I am out
Snack - Apple
Dinner - Cobb Salad

FRIDAY ~ TGIF!!!!

Breakfast - Eggs
Snack - Yogurt
Lunch - Taco Salad (use leftovers from burrito bowls)
Snack - Hummus & Veggies
Dinner - Meat Loaf, Mash Potatoes and a veggies

There you have it! I made my shopping list as I made my menu. I like to look at different blogs or Pinterest while I am making my menu for different ideas.

Menu Monday

It is that time again to be making a menu for the week. I make my menus on Friday before I head to the grocery store. I have been trying to make easier things. I have a limited time to cook dinner. Usually I can entertain George long enough to cook for about 20 minutes. I either have to lock him out of the kitchen with 2 gates or put him in the highchair with a snack.

I would rather not give him a snack before dinner because then he doesn't eat good. Sometimes you just have to do whatever it takes to get a task done. The other night I decided to give him a snack. I was making avocado sauce to put on pasta. He had one taste of the avocado and he ate a whole one. He was shoveling it in as fast as he could get it in his mouth.

I am still using things from my freezer. I like to buy meat when it is on sale. Here is what is on our menu this week.

Menu Monday

I have been back to making a menu for each week. I just haven't been posting them on the blog. I have cut dairy out of my diet. I am trying to avoid it completely. So far so good. I don't even miss it at all. There are so many options out there that I don't feel I am missing anything. I thought I would miss sour cream, cheese, and cream. Thankfully there are coconut milk options that are fabulous!

Creamy Potato Soup

I found this recipe here, but I made changes for it to work for me and the ingredients we had in the house. This has become our new favorite potato soup recipe! 

Creamy Potato Soup
Roux ingredients: 4 T flour, 2 T buter, 2 T olive oil (made separately then added to soup)
Soup ingredients:2 T butter
2 T olive oil
3 stalks celery (chopped)
3 carrots (chopped) or 1 cup of baby carrots
1 small yellow onion (diced)
4 C chicken stock
2 cups whole milk
1 1/2 cups half & half
2 T chicken bouillon
1 tsp kosher salt
1 tsp pepper
1 T parsley flakes
3 bay leaves
1/4 t turmeric
1/4 t garlic
5-6 medium size potatoes
Directions:
1. Make the Roux first in a separate pan. Melt olive oil and butter in a saucepan. Sprinkle flour over top and whisk together until smooth and bubbly. It should only take a few minutes. Set aside. If you wanted to make gluten free you can use a corn starch or gluten free type of flour. 
2. In a dutch oven, or large soup pot, heat olive oil and butter over medium heat.
3. Add vegetables and sauté until softened. 
4. Add the rest of the ingredients, including the roux, and bring to a boil. I don't add the potatoes until this point otherwise they get mushy. Make sure to stir every few minutes to keep the milk from scalding.
5. Once boiling, turn down to low and simmer for 25-30 minutes, stirring occasionally.
6. Taste test and add more salt or seasonings. Remember flavors develop over time, so don’t over do it!

Menu Monday

It is back to planning a menu for the week. We have decided to go back to meatless Monday's and adding in taco Tuesday's. I will not turn down any Mexican food! While we were in Florida we ate a lot of fish, so we decided to add more fish to our diets. I love boneless fish! Art went fishing on vacation. One of the people on the boat caught Mahi Mahi and gave Art a big bag. We made fish tacos were were amazing.

BBQ Chicken Pizza

Last week I made BBQ chicken for dinner one night. My plan was to make additional chicken, so I could make BBQ chicken pizza. I <3 amp="" class="goog-spellcheck-word" fresh="" span="" style="background-color: yellow; background-position: initial initial; background-repeat: initial initial;">Easy's
pizza dough! It is sooooo yummy! I bought the dough and wasn't going to use it before it expired. I threw it in the freezer for a few days. The night before I needed it I pulled it out of the freezer and let it defrost in the fridge. 

I don't follow the instructions very well. It says to let the pizza dough come to room temperature before you stretch it out. I stretched it out when it was still cold, put my topping on top and popped it in the oven for 18 minutes. The crust was a little crispy which I love. 

The pizza was very simple. I bought the dough, spread BBQ sauce over the top, shredded chicken, sliced mushrooms, sprinkled cheese and baked. I bought a Caesar Salad at Fresh & Easy. We got 3 meals off the salad kit. 


Art bought this Uncle Si at Walmart for our upcoming vacation. My MIL bought the gnomes and wrote our names on them. The gnomes will go out to our garden soon.

Menu Monday

It is time to pull out the crockpot again this week. 

Orange Chicken - I am going to put chicken thighs in the crockpot, pour Panda Express orange sauce over the chicken and cook for a few hours. I will serve with rice & steamed veggies.

BBQ Chicken - Same thing as above but using BBQ sauce. 

BBQ Chicken Pizza - I will use leftover BBQ chicken

Costco Pineapple Sausages - I recently picked these up and they are super yummy!

I bought 5 pounds of chicken thighs at Costco 2 weeks ago, so it is time to use them. Art is going to be chickened out by the end of the week. My goal is to make enough to have leftovers for lunches. 

I recently started doing a lot of shopping at Costco. Their prices are just so much better than the grocery store. I can buy enough sour cream for a month for less than I would pay for 2 grocery trips. Same with mayo and veggies. 

Sammy especially loves it when I go to Costco to buy rotisserie chicken. He gets very excited when he comes home to smell "his" chicken. He thinks this chicken is all for him. He will walk around the kitchen whining each night until he gets chicken. Sometimes he doesn't feel it is enough, so he whines & whines for more. If he doesn't get chicken in his food he will go on a hunger strike. We have created a monster! I didn't buy a chicken this week manly because I am sick of it. When Bing Bong is born I think I will send someone to Costco to buy a chicken for Sammy. That should help him transition. lol

Menu Monday

I am planning to pull out the crock pot this week. I love using that thing! 

Ribs & roasted red potatoes
Chili - I will cook dry beans in the crock pot. I have frozen tomatoes from our garden I need to use. I will cook the beans one night. I also want to use some beans for a taco salad for lunch.
Sweet potato burgers - Art will not be a big fan of these lol
Salmon & Asparagus

I am planning to use the black beans with lots of meals this week. I haven't been very good about meal planning lately. The freezer is pretty low on stuff. We have a 10 pound turkey taking up lots of space. Maybe I will cook it for Easter although I like ham for Easter. The thought of just cooking a turkey and taking it off the bone sounds like a marathon.
