Sicky

I haven't been sick in years. I really try to be healthy. I don't avoid sick people because I try to build up my immune system. Well I got hit hard this week.  On Monday night as I was getting ready for bed I thought I was having a bad allergy attack. I was coughing a little bit.  I took some allergy medicine and went to bed. When I woke up Tuesday morning I felt like a truck had parked on my chest and I sounded like a barking seal.  I was pretty sure I had a fever, so I left work around 2pm on Tuesday.  Sure enough I came home, took my temperature and I had a fever. Wednesday I worked from home. Today I called in sick and went to the doctor. I have RSV.....I thought only small children got RSV.  The doctor gave me some cough medicine with codeine. It is AMAZING stuff!!!!
 
I will be staying home on Friday too.  I have been having major issue with spelling today. Good thing I didn't try to work from home today. I was having major issue with spelling before I took the cough medicine. I have had a fever for 3 days. Friday I think is the day the fever needs to stays away for good! I am like a small child when I have a fever. I HATE fevers! They are just the worst things!!!

Sammy has been my little cuddle buddy today. He has been laying with me all day. Tonight I was taking a little nap and he started attacking my feet. He thought it was play time.

I'm going to put in Miss JudgyMcJudgerson pants for a minute. It drives me CRAZY when these people go on Biggest Loser & quit!!! Listen people you were given a chance of a lifetime. You throw a fantastic opportunity away. Last season & this season people walked off.

I fought to lose 80 pounds by following a crazy diet & working my butt off exercising. I know how hard it is!!!

People getting healthy is hard but it is sooooo worth it!!!!

Menu Monday

Today classes start....I spend Saturday & Sunday diving right in. I figured I wouldn't be able to keep up with the blog on a daily basis, but the weekend confirmed it. It will be a miracle if fractions don't kill me between now & May. There have been tears shed & books barely surviving a back yard Bon fire.

Our menu is going to consist of what is easy to cook while trying to still be healthy. I can see lots of salad, sandwiches & soups on our future menu. Art will be doing a lot of cooking too. My time in the kitchen is going to be limited.

Last week I made potato & ham soup and then we ate with the inlaws one night. I still have some leftover stuff to make this week.

I'm going to try to make Olive Garden sausage, potato & kale soup. I had it this past weekend & it was really good. It can't be too hard either to recreate.

Relaxing

Just laying around relaxing with Mimi on a nice warm wintery day!  He is looking more and more like Amber every day. The other day he was laying on my lap sleeping and he started giggling in his sleep. It was the cutest thing ever! The day I took these pictures he was smiling away in his sleep. Of course when I get the camera out he stops smiling. Tricky little thing! lol

Crockpot Kielbasa

I made this kielbasa for dinner the other night. I found the recipe on Pinterest. It was really delicious and super simple too.
 
 
 
1 package of kielbasa
3/4 cup brown sugar
1 cup applesauce
2 tbsp. Dijon mustard - I used a generic brown mustard
2 cloves of minced garlic
 
Cut kielbasa into 1 inch piece. Mix all other ingredience together and place everything in a crockpot for 2 hours on high. wa-la that is it! I served it with some veggies and fried potatoes. Art really liked it and asked for seconds.

What's for Lunch?

This week I have been trying to get back into the "healthy" kick. Ugh it is so hard. It is much easier to eat Chipotle every day instead of a salad. Tuesday night I was trying to figure out what to take for lunch on Wednesday. I was already depressed it was time to go back to work and I wouldn't have another holiday until Memorial weekend. Ugh!!!!

I had plenty of healthy stuff in the fridge to make a salad. I grabbed some spinach, apple, walnuts, chicken, goat cheese and a bowl. I dumped some balsamic vinegar & olive oil in a container to pour over my salad. It was AMAZING!!!! It was around 400 calories for a huge salad. Here are the measurements.

4 cups - Spinach
3oz - chicken
1 Apple
1 tablespoon - walnuts crushed
1 oz - goat cheese

Toss it all together and pour about a tablespoon of vinegar & oil over the top with some kosher salt.


Super simple and super delish!

2013 Goals/Resolutions

I seem to have a pattern where I post my resolutions on the 3rd of January. The past couple years I have had a short list. I completed some of my goals from 2012 and other have made their way back over to my 2013 list.

2013 comes with some goals along with a word - Finish. A lot of the things for 2013 are finishing things I have started in previous years. It is time to finish what I have started.  One of things I will not be working on finish is my goal to start a family. It is not on the agenda this year at all. My goal is to actually not get pregnant this year. My body physically and emotionally needs a major break. I went through a lot in 2012 and I just need a break!

2013 Goals
 
- my marriage is top priority this year
 
- to lose the last of the weight to reach 100 pounds
 
- finish school
 
- run 100 miles over the year
 
- run two 5K's
 
- start being more aware of my phone/internet time
 
- stop wasting time on celebrity gossip
 
Every year my marriage is on the list of things to improve and make stronger. This year though I want to put more effort into my marriage. Sometimes I feel we just float on by. We will be celebrating 5 years of marriage in 2012.
 
Last year I wanted to lose the last of the 30 pounds to reach 100 pounds lost. I lost 10 pounds and then just maintained my weight for the year. I really found a balance with keeping my weight under control. I was able to eat bad occasionally and worked out consistently. I was able to push my body to new levels fitness wise.
 
Finishing school is a BIG one to complete this year. My goal is to have it completed by June. I have 5 classes to complete to have my AA in marketing. I started going to college about 8-9 yrs ago and never finished my AA. I am going to really have to apply myself over the next 6 months to get excellent grades and finish by Summer.
 
Running 100 miles and running two 5K's go hand in hand. My goal is to run 2 miles each week. I ran one 5K last year and feel I want to push myself this year. I have a love/hate relationship with running. I love to go faster than just speeding walking, but I hate running because how it sucked my breath away. I need to just get my endurance up and keep it consistent.
 
Well with school starting I will not have as much time to be on the internet so much. I just need to be more aware of the present life and not my internet life.

Have you set any goals or made resolutions of what you want to accomplish in 2013?  I have learned one thing while looking at 2012 resolutions....I need to keep my goals in front of me all the time.

Menu Monday

Well it's time to get back to meal planning! I have been winging it for weeks, eating stuff from the freezer or we ate out a lot. We have had a crazy couple of weeks. I think life is about to return to normal.

Here is what is on our menu for this week.

Monday - Turkey, cheddar, apple sliders Krystal recipe is for ground chicken, but I am going to use ground turkey.

Kate Spade

I really love Kate Spade! I recently bought a wallet from Kate Spade that is a purple/pink color. I really love the quality of Kate Spade. Recently a Kate Spade Outlet opened up about 45 minutes from me. Last week I took a trip over to the outlet.
 
I felt like a little kid going into Toysrus for the very first time. I just wanted to jump up and down. I was just there to look around, but as I entered EVERYTHING was 60% off. WHAT!!!!! I found a 100 things I wanted. I am still kicking myself for not buying a purse I LOVED. I put myself on a spending freeze except for birthday and Christmas money. I didn't have enough money to buy the purse, so I didn't get it.
 
I did purchase a passport holder and a new iPhone case. My old iPhone case was worn out, so the iPhone case was an actually need. I have been on a pink kick so these items were just perfect.

Introducing Kaleb Gary

I just realized my post on December 19 never posted to the blog. Better late than never....

Kaleb Gary arrived December 18 at 9:23pm 6 pounds 11 ounces 20.5 inches.

I rushed out last night to buy him My First Christmas bib & ornament. He has to be ready to celebrate Christmas!!!! The bib is bigger than him lol. We could probably use it as a blanket.
