Happy Mother's Day!

Mother's Day is a hard day for me. Most of the time I just want to stay in bed all day, cry, and forget about the entire day. It is very difficult to sit in church when all the mothers are asked to stand. There I sit in tears wondering why have I been given this off script path in life? See my script for my life was to be married for a year or two then have a baby. Realistically I knew we could afford 2 kids. My dream would be to have 4 or 5 kids. I wanted a loud crazy house full of snotty nose kids screaming through the house as I am trying to talk to my mom on the phone. God has had other plans for me. To be honest God's other plans have been difficult at times to accept at times.

I had decided before the start of the year, 2013 would be the year we would not focus on having a baby. Little did I know what was going to transpire in 2013. I am glad I went into the year with that mindset because of the off script path I was about to get. I never ever imagined I of all people would get cancer. Hard things happen in life, but cancer does NOT happen to me. I have more tests and scan ahead of me this year. My body has to recover from surgery and my thyroid has to regulate before we can think about having a baby.

I decided 2013 is the year Mother's Day is not going to make me sad. I am going to celebrate my amazing mother and mother in law. I am going to celebrate Amber's first Mother's Day. Kaleb and I made little foot prints out of salt dough to give her. 

My mother always remembers me on Mother's Day. She sends me cards/gifts each year to say Happy Mother's Day. It is very sweet of her and very much appreciated. This year she sent me an infinite silver ring. Over the weekend I received some of the best text by some of my amazing friends.

I have been blessed with an amazing mom who has always stood by my side. There are times I know she was shaking her head wondering what in the world I was doing, but as I made mistakes there she was standing by. I am so thankful she was able to come take care of me after surgery.

Birthday Celebration!

On Sunday evening we celebrate Art's birthday with his parents, Amber, Marcus and Kaleb. We grilled kielbasa, chicken and had ceasar salad & potato salad. Then we took a bunch of pictures trying to get a few that would work out. lol

Krystal's Virtual Baby Shower - CUPCAKE!

A little over a year ago I participate in my very first virtual shower for my friend Krystal. I made a Cuban cake in honor of little Cookie. Well a year later we are having another virtual shower for Krystal as they are about to welcome Cupcake! The theme for this virtual shower is CUPCAKE. lol I was trying to figure out what kind of cupcakes I should make and each time I came up with some thing someone else had picked it. Well luckily Pinterest helped me in a big way this time. 

My readers know I have been trying to avoid sugar and carbs. I found a recipe for Flourless Chocolate Cupcakes. Hey at least I am avoiding one of the items - flour. I also can share these cupcakes with  my future son in law since he can only eat gluten free products. When I bake I like to share them with people. 

I am so excited for Krystal to welcome little Cupcake into the world! Cupcake is going to be such a handsome little man and a lucky little brother to Elena. Eric and Krystal are such amazing parents to Elena. It has been very exciting to watch their family grow and see them as parents. 


Flourless Chocolate Cupcakes

3/4 cup butter
1.5 cups chocolate chips
6 eggs
1/2 cup sugar

In a double boiler melt the butter and chocolate. Separate egg whites and yolks. Let chocolate and butter mixture start to cool and then add in yolks. Beat egg whites until peaks start to form. Gradually add in the sugar and beat until eggs form stiff peaks and glossy. Whisk some of the egg whites into the chocolate mixture and then mix egg whites into the entire chocolate mixture stirring slowly. Bake at 275 for 25 minutes.

Gray Blazer Inspiration

I recently bought a gray boyfriend jacket from Target. I saw it online for $12.49 on clearance. I thought I would take a chance to see if it would work for me. Well I was in luck! It fit really nice and is super comfy. I also bought it in black. The hunt began on Pinterest to find some gray blazer inspirations.

Little Man

The little man spent Tuesday through Saturday with us. It was really nice to have him there. I love a baby in pjs and he is so snuggly at night. Kaleb has such a little personality already. On Saturday I put him in his carseat while I mopped the floor. He was sitting there talking away, chewing on his paci and reading his bear book.

Today Art turns 45!!!! This is birthday #8 we've spent together. On his birthday 8 years ago he asked me to be his girlfriend. My response was are you sure? Bahahaha I was head over heals for him and he wanted to date exclusively, so I needed to make sure he was sure. Eight years later I still drive him bonkers with my questions!

28. Art decided one year to dye his beard. I had bought him facial dye but he didn't like the color so we decided to use my sister hair dye. Well the hair dye was a little over powering, so he grabbed a mini beer bong to use as a breathing device. Luckily his beard was a nice red color and he was able to continue to get done fresh air.

Suit Shopping

On Sunday we took a trip to Men's Wearhouse to find Art a suit. He needs a suit for Amber's wedding and church. Well I learned a lot about mens clothes.
  • jacket sleeves should be above his knuckles
  • pants with pleats can be cuffed or hemmed regular
  • flat front pants should be hemmed regular
  • every man should have a white, off white and blue shirt
  • shoes and belt should match in color
  • blazers can be a light color and pants a dark color & vice versa
  • three stripes and you are OUT - you can wear stripes together but no more than 3
  • tie clips are an accessory plus they hold a purpose to hold a fly away tie down
  • Art will actually wear purple, but pink is NOT an option
