Air Fryer Eggs!

We eat A LOT of eggs in our home! We go through 4-5 dozen eggs every 2 weeks. I sent eggs to work with Art every day for breakfast. Some times it's just scrambled and some times I do an egg bake. 

One of my friends Caryl posted on IG that she bought these OXO silicone air fryer molds to make over easy eggs. She said she makes an over easy egg in about 10 minutes in her air fryer. WHAT!!!! Well like any good influenced person does I ordered the OXO molds from Amazon for $4. I made some over easy eggs a couple times. Then I decided to try other type of eggs.

I cut up some red onion and jalapenos to add to the bottom of the cups. I whisk 6 eggs and 1/4 cup of salsa in a bowl. I pour the whisked eggs over the onion and jalapenos. I place them in the air fryer at 400 for 10-12 minutes. They easily come right out of the cups without any oil.

I have been eating the eggs over a slice of turkey and a slice of Daiya cheddar cheese with some Franks Red Hot over the top! This is my favorite breakfast right now! 

Cash has been eating these eggs without jalapenos. He was on an egg strike for awhile. He ate one the other day and was yelling for more. 

The combinations for eggs you can make are endless! Let me know if you try these and what you think!

Twix Bars - Dairy, gluten and refined sugar FREE!

A new follow for me on Instagram is Stacy_simmons made these gluten free, dairy free, refined sugar twix bars. I had to try them! They looked really good. One thing about being home so much is I have been baking more. Baking is not my thing. I would rather cook a full meal over baking. Maybe I will become a baker now. lol

The boys love to bake with me. It's usually easier to let them bake then to have them help cook a meal. As soon as I pull the mixer out Cash comes running and pushing a chair over to the counter. 



Cookie Bottom:

1/2 cup coconut flour
1/2 cup almond flour
1/3 cup coconut oil
3 tablespoons honey warmed

Put in a small pan lined with parchment paper. You will need to pack this down tightly onto the parchment paper. Bake at 350 for 10-12 minutes. 
Completely cook before you add the next layer.

When I pulled it out of the oven I was afraid I forgot an egg or something because it seemed crumbly. Once it cooled it wasn't crumbly at all. 



Middle Caramel Layer:

1/2 cup almond butter
1/4 cup maple syrup
1/4 cup coconut oil
1 teaspoon vanilla extract
sprinkle salt

Stir in a sauce pan over low heat until it all liquefies. Let it cool before you add it to the cookie layer. Spread it evenly over the cookie layer and put it in the freezer for 2-3 hours. 



Chocolate Layer:

I used 1/2 cup of Enjoy Life dark chocolate chips
1 tablespoon melted coconut oil

Melt in a sauce pan over low heat. After the chocolate has melted pour over the top of the cookie and caramel layer. Sprinkle the top with kosher salt. 

I put these back in the freezer for about 10 minutes before I cut them into squares. After I cut them into squares I put them into a zip lock bag and keep them in the freezer. If you take them out for a couple minutes you are able to eat them. These bars melt quickly, so you don't want to leave them out. 

My final verdict is they don't really taste like a twix, but they are sure yummy! Let me know if you make these and what you think!!

Refined sugars and your body!

When I started my weight loss journey almost 10 years ago sugar was one thing that really was eye opening. When I was doing the HCG diet I really had to pay attention to ingredients in things. Then when I started eating paleo again back to the sugar watching. 

Have you ever looked at the grams of sugar in that Starbucks drink? What about in the ketchup, crackers, lunch meat, or the processed foods you are eating? Start looking at ingredients on the things you are eating and see how many of them have sugar added to them. 

Here is a list of refined sugar. 
  • white flour.
  • evaporated cane juice.
  • instant starches.
  • corn syrup.
  • high fructose corn syrup.
  • brown sugar (made by adding molasses back into refined white sugar)
  • fructose.
  • processed artificial sweeteners
Here is what the Cancer Center had to stay in 2016:

"The body breaks down refined sugar rapidly, causing insulin and blood sugar levels to skyrocket. Because refined sugar is digested quickly, you don't feel full after you're done eating, no matter how many calories you consumed. The fiber in fruit slows down metabolism, as fruit in the gut expands to make you feel full".

Refined sugars may increase your risk of obesity, type 2 diabetes, and heart disease. They're also linked to a higher likelihood of depression, dementia, liver disease, and certain types of cancer.

In the brain, excess sugar impairs both our cognitive skills and our self-control. For many people, having a little sugar stimulates a craving for more. Sugar has drug-like effects in the reward center of the brain. Scientists have proposed that sweet foods—along with salty and fatty foods—can produce addiction-like effects in the human brain, driving the loss of self-control, overeating, and subsequent weight gain.

The NIH did a study in mice modeling autoimmune issues gave them sugary water and saw the diseases worsen by activating inflammatory immune cells. The findings suggest that a low-sugar diet may help prevent or treat autoimmune diseases such as Crohn's disease and multiple sclerosis.

Sugar stimulates the production of free fatty acids in the liver. When the body digests these free fatty acids, the resulting compounds can trigger inflammatory processes. Different kinds of sugar may contribute more or less to inflammation.

If you have any type of autoimmune diseases sugar is not your friend whatsoever! I can really tell a difference when I eliminate sugar from my diet. My inflammation really seems to decrease and my I don't crave sugar either. When I am eating sugar on a daily basis my craving for sugar is insane! I also feel my entire body become inflamed in a short amount of time. 

It blows my mind how people do not pay attention to the amount of sugar they are putting in their bodies every single day. I keep seeing all these people making coffees on social media adding tablespoons upon tablespoons of sugar to their coffee. People do you know what this is doing to your body? You are poisoning your body on a daily basis adding all that sugar. 

If I am going to use sugar or give my kids sugar I like to use maple syrup or honey. They are a natural sugar that your body can process. I would like to challenge you to pay attention to the amount of refined sugars you are consuming on a daily basis. Try cutting them out and see how you feel. Also think about what your kids are eating and how much refined sugars they are eating. Mamas we need to consider what our kids tiny bodies are consuming and setting them up for a healthy adults. Our world is consumed with autoimmune diseases, cancers, heart disease, high cholesterol and so much more. Refined sugars are related to so many of these diseases!

I really feel I need to share more about living healthy, multiple sclerosis and easy ways to help people live a healthier lifestyle. I feel this is part of my calling as a person and mother. I can only control what my children eat, but I can help other mothers make better choices for their kids if they want the help.

My tip to adding Liver to your Diet!

I started adding organ meat to our diet about 4 years ago. Growing up my mom use to make liver and onions. I loved it as a kid with some ketchup.

Liver is high in vitamin A, folic acid, iron and zinc. Liver is one of the most nutrient dense organ meat with a powerful source of vitamin A. Vitamin A is extremely beneficial for reducing diseases that cause inflammation like multiple sclerosis, arthritis and Alzheimer's along with great benefits for eye health. I am always looking for ways to reduce inflammation, since I struggle with it so bad from my multiple sclerosis. 

I have fried it with bacon grease and onions, but I struggle with the texture of it. I got an idea one day to buy some liver from a local organic natural market Victoria's Natural Market in Tomball, TX. I love going to Victoria's to get my chicken bones to make bone broth, liver, local honey and various other organic local items. 




I bought some liver and took it home to grind it up. I decided to add it to meatballs the first time. No one even knew it was in there and you couldn't taste it at all! I took the remaining ground up liver and put it in little baggies to freeze. When I make anything with ground meat I will add beef or chicken liver to it. I have found beef liver really gives ground turkey a lot of flavor!

My family has no clue they are eating liver, but they are getting all the amazing benefits from the liver! I most likely wouldn't sit down to eat a plate of fried liver these days, so I can't expect my kids to eat it. I normally do not hide foods to get my family to eat them. I serve them the item and they decide if they want to eat it or not. To me adding the liver to ground meat is like adding in some extra vitamins. We all need to take vitamins, so let's add a little to what we are going to be eating.

Paleo Whipped Coffee


Paleo Non Dairy Whipped Coffee!!! Testing out new coffee recipes seems to be my quarantine past time. I keep hearing about whipped coffee all over social media. The regular whipped coffee has a lot of refined sugar. I try to avoid refined sugar, so I decided to try to make a paleo non dairy version. 

Recipe:

1 TBSP instant coffee
4 TBSP hot water
1 TBSP coconut sugar
Blend this all together - I put it in my ninja blender for 1-2 minutes

I warmed 1/2 cup almond milk & 1/2 cup coconut milk. I poured the milk into my mug and put the whipped coffee on top. Then I slowly stirred it all together. Sooooo yummy!

You could also make this iced by not warming up your milk and pouring it all over ice. I like it both hot and cold. Whipped coffee is amazing! It changes up the daily cup of black coffee into a fancier latte! Have you tried whipped coffee?  Let me know if you try this paleo non dairy version!

Gestational Diabetes Test while Eating Paleo

I have ate a paleo diet during this pregnancy. I felt it was important to hopefully keep any MS attacks at bay while I’m pregnant and hopefully have a less severe attack afterwards. Autoimmune issues seem to go into remission during pregnancy then rear their ugly heads with a vengeance after you give birth.  
I did a lot of google searches to see what people did for the gestational diabetes tests that didn’t drink that nasty drink. I was determined I would not drink that stuff. You can google it to see what’s all in it and decide if it’s right for you. For me it wasn’t the right choice. It has corn, dyes, and sugar. Things I don’t consume. I feel drinking that stuff would make my sugar go insane and wouldn’t give me a clear reading.  I did do the glucose test when I was pregnant with G. I felt extremely awful the rest of the day after the test was over. 

I had read about different tests that some doctors will do instead. When my doctor brought up that I needed to get my test I had done my research as to why I wouldn’t take the test. I told her my reasons. She tried to tell me medicals reasons why I should. I asked her for other options. I was very clear I wouldn’t drink the glucose drink. I asked for another test or told her I would check my sugar daily. Thankfully they allowed me to get my sugar tested after fasting 8 hours and used those numbers. I passed with flying colors. Actually my fasting numbers were almost below normal. 

I really feel that eating a paleo diet has helped me have a much more normal pregnancy than I had with G. This baby is growing on track and my sugar has been stable. My fasting sugar levels were high with G. I was able to keep it controlled with diet. He ended up being induced because they didn’t feel he was growing well inside me. These are things I’m not experiencing this time. I also know that every pregnancy is different. I do feel having a healthy diet has helped me greatly with my MS and this pregnancy. I do experience MS issues daily, but it isn't as severe as when I was eating anything and everything.

Colic Game Changer!

I have been thinking about writing a post on colic for over a year. Long before I ever got pregnant with baby #2. When G was a baby I remember when his colic started so vividly. It was on Halloween. My mom had left on October 30 after being with us the month. I spent the entire day holding him as he cried. Finally in the evening he was able to release some gas and was so happy. I was exhausted! Over the next few months the colic only got worse. 

He would be colicky in the evening from around 4pm through 7 or 8pm. It was rough! Once I had gone back to work I would come home and hold him for hours. I would try not to move him once I would get him in a position where he wasn't crying. Occasionally the colic would let us if he sat in the Bumbo chair. Whatever position relieved his pain I would try to leave him as long as possible. 

I tried numerous gripe drops. Colic Calm was my favorite. It helped some times to help relieve the colic for G. It would help the colic from screaming to just fussing, but it didn't take the colic away for him.



I started taking him to the chiropractor maybe when he was about 2.5 months. At 3 months old I added a probiotic to a bottle once a day. I bought Flora Infant's Probiotic at Whole Foods or Sprout's. It was in the refrigerated section by the vitamins. I would not recommend buying this online. I would go to a store and buy it from the fridge section and keep it in your fridge at home. I started off with maybe a 1/8 of a teaspoon once a day and worked up to 1/4 teaspoon. Between taking him to the chiropractor and the probiotics it was a TOTAL game changer!!! 

We went from screaming between 3-4 hours a night to laughing and cooing within 1-2 days. If he skipped a day or two without probiotics his poor little tummy was in trouble. Once he was a year old he didn't require it anymore, but I still continued to give it to him. I noticed what a change in his health. If he didn't have a probiotic he would get sick. Probiotics are so important for a healthy gut! I will be starting the new baby out on a probiotic from day 1. I will have Art bring some to the hospital after he is born. I will add the probiotic to a bottle of breast milk each day. I also take a daily probiotic myself.





I wonder at times if maybe he had a reaction when I ate dairy. I am not sure. I didn't even know that I should try to eliminate foods from my diet to see if it made a difference. Looking back now that I eat Paleo grains and dairy cause me a lot of problems. I had asked his pediatrician if he had reflux which the doctor didn't think he had. 

This is my recommendation for anyone dealing with colic or any type of stomach issues with their infant. A probiotic won't hurt anyone. If you have to give other medicine the doctor recommends a probiotic is always helpful too!

Monday Thrive - October 30

1) There are things as a mother I never imagined saying. 

 - If you decide to pick your nose and eat your boogers I am going to have to take the ipad away from you. 
- No, I do not smell, the smell is from the porta-potty. After my toddler announced to the entire pumpkin patch that I stunk!
- Please do not eat that donut off the floor of Dunkin Donuts that you just dropped. 
- We do not take our shoes off at the play ground to run around. You need to leave your shoes on until we get to the car. 

There are so many other things I say that I just can't think of right now. I need to start writing these things down. lol


2) Life has been crazy lately. I actually have traveled a lot this fall. I don't travel much anymore since I stopped working. G and I went to visit my cousin in Texas for a long weekend. Then I went on a girls trip which was absolutely amazing! Art, G and I are getting ready to go on vacation. We planned this trip long before I went on all these others mini trips. I am really excited for our vacation. The 3 of us haven't ever gone on vacation alone. We have gone on lots of trips to see people or taken people with us. It's going to be very nice for the 3 of us to just relax on the beach. 

3) I haven't been posting menu ideas for awhile because I feel like we have been eating the same things every other week. I go to Costco, buy whatever veggies they have, grab meat from Amazon or Costco and throw it together. My energy level has been awful lately. Part of this was because I went off paleo for a few days a month or so ago. I suffered for weeks trying to get back on track. In the future I will have 1 cheat item instead of a cheat days. Wow it really is not good for my MS. I had so many issues after not eating paleo. Also I realized every year for the past 4 years in October I really battle MS. My 2 major attacks were in October. The other 2 years when I didn't have an attack I just struggle with things terribly. I can't figure out why. My vitamin d level is good. October has been warm for us, so it isn't the lack of sunshine. I have actually gotten more sun in the past month than I do in like December or January. Our vacation is coming at a great time. Hopefully the rest and relaxation will really help me. 

4) I am looking forward to the holidays! My sister and her fiance` are coming for Thanksgiving. We are going to celebrate Christmas with her while she is here. It will just be so nice to have her here. Packages keep arriving from Amazon that my sister has ordered. G thinks he needs to open them and check what auntie has sent. Trying to explain to a toddler the boxes can't be open aren't going well. 
I am going to put up my tree before Thanksgiving this year. :::gasp:::: I know before Thanksgiving!!! I want it up before my sister comes and I don't want to do it while she is here. We have way too much tourist activities to be attending. 

5) Last week we lost one of MTC friends. I met her last year at the conference. It's hard to believe one year later she is gone. This is what gets me with MTC. One day people are working, functioning normal life and the next day they are in hospice. If you don't use Smile Amazon please consider it! Each purchase Amazon will donate money to a charity. Medullary Thyroid Cancer really could use the money for research. There is such little research that has been done for MTC. We really need to find a cure. Right now more research is being done than has probably ever been done. I donated some of my tumor tissues recently to help with the research. I am not sure if they will find a cure during my lifetime, but any way I can help to hopefully one day find a cure is so important to me.

Monday Thrive August 28

1) I have always loved back to school stuff in the stores. I love school supplies. It's been a long time since I have been in school or needed to buy school supplies. When I see school supplies on sale for $.25 for a box of crayons I think I need to buy like 10 of them. lol I do try to avoid that area of the store because honestly how many pens or boxes of crayons does one person need? 

G is now going to preschool, but we don't have to take any supplies. He will be going 2 days for 3 hours a day. All supplies are provided and snacks, so we just send him in play clothes. They do lots of art and play outside a lot. He comes home usually with paint and dirt all over himself. I learned very quickly do not send him in cute good clothes. They won't make it! One of his sweatshirts still has red paint on the sleeve. That will be his school jacket from now on. lol

2) During Nordstroms Anniversary Sale I bought the Barefoot Dreams circle cardigan. I wasn't sure about it, but I had heard so many great reviews about Barefoot Dreams items. I decided to order one. If I hated it I would just return it. OMG! This thing is the softest thing in the world! I wish I had ordered another color. I wear it all the time! I really want the mink one next! 



I also discovered for the first time probably in my entire life I actually need a black cardigan. The black and mink cardigans are going on my wish list! I will be ordering another one of these next year during the sale. 

3) I started listening to Jen Hatmaker podcasts when I was flying back from ND. I LOVE this podcast!!!!!! Her recently one with Brene' Brown is a must listen too! Sometimes I need something uplifting. This podcast is exactly that! I always feel so much better about what is going on in my life after listening to Jen. She makes you feel like you are doing your best and your best is good enough!

4) The hurricane/flooding in Texas is so very sad! Last year Art and I went to the Houston area to look at possibly moving there. Maybe one day we will, but right now we aren't. The area that is flooding is right where we looked at moving. I saw pictures of MD Anderson the medical facility I want to go to. It is terrible! The place that helps thousands of people is flooded. It's really heart breaking to see MD Anderson flooded! I know so many people that go there. They are one of the few places that understand Medullary Thyroid Cancer and actually help people fight this ugly cancer. Lots of thoughts and prayers for everyone dealing with this catastrophe. 

5) I am not sure if I shared these paleo chocolate chip cookies on the blog in the past. Sometimes you just need chocolate chip cookies even when you are eating as healthy as possible. These cookies are amazing! My dad even liked them which says a lot. He thinks I eat the craziest stuff. If you want something healthy, non-dairy and paleo these are your go to cookies! I actually haven't bought the ingredients for them because I can't avoid them.

Monday Thrive - August 21

I am trying to get us back into our routine after a couple months of craziness. G went to school every day for a month, then we were gone for a month and now we are trying to find our new groove. I thought I would share some of my traveling tips with a toddler and eating paleo in today's post. 

1) Last year in September I wrote a post about Traveling with a Toddler. I didn't want to be a traveling Gypsy this year, so I wanted to come up with a different way to bring a car seat. Two days before we left I ordered a luggage cart you can find HERE. I wasn't sure if I was going to use it or if I would use my Bob Stroller. I figured if I decided to use my Bob I would return the luggage cart. It was moments before our shuttle picked us up that I decided to leave the Bob at home and use the cart. Best decision!!!! 

I was traveling alone with G. I needed to have my hands free as much as possible. When we got to San Francisco Airport I told G the cart was too heavy and I needed help pulling it. He was really nervous about riding in it. I threw our carry on bags in there, pulled the luggage cart with car seat and my suitcase. I had him right beside me, so I could grab him if necessary. I had looked at the car seat carts which ran $50-$100. I looked at them numerous times online. I just thought they looked like a luggage cart and the they were marking them up because parents buy all this crap we think we need for kids. I am glad I went with a cheaper version. This will work great for us while we travel. We have 2 more trips coming up this year. I also like to bring our car seat on the plane. 

On our flight home G wasn't scared to ride in the car seat. We had an episode of a tantrum in the Denver Airport. I strapped him in there while he was whaling and got to our gate. 

2) Just buy your kid their own tablet! It's a life saver for traveling. We ended up buying him an Amazon Fire Tablet. I am still not sure I am happy with this purchase. I kind of wish we would have just spent the extra money and bought him an Ipad mini. You can download YouTube Kids on the Fire. G loves YouTube kids. If you are only going to let them use it for traveling this is no big deal then. 

I was able to download shows from Amazon Prime and Netflix. Just a helpful tip download the shows the day before you leave. I downloaded some of them and they expired before he could even watch them. Thankfully we realized this on the 1 hour flight. I had some new toy firemen I was able to pull out and save the day. Rookie mistake for downloading shows. :::eyeroll:::

I downloaded a bunch of podcasts for myself. These saved my sanity for the 3 hour flight. You go through a magazine way too fast! I downloaded a bunch of different ones. Jen Hatmaker has a new podcast I just love! I listened to some Dave Ramsey to help me stay on budget and My Favorite Murder. Those girls on My Favorite Murder are crazy. I can only listen to that podcast a little or become paranoid about being murdered. It's very unlikely I will be murdered on a plane, so I felt it was safe to listen on there. I had to then listen to Jen Hatmaker before I got off the plane. lol

3) Pack lots of snacks for everyone!!!! On the way to ND I packed some paleo pizza. Thankfully I packed 3 pieces. G ate one, I dropped one and I got to eat one. I packed the Kids RX bars. I love these! They are the perfect size! I packed G some of his favorite snacks - crackers, pouches, fruit leather, nuts. I usually pack a big bag of nuts. Both of really like them. 

I always pack a reusable water bottle for both G & me in our carry on bags. Once we are through security I find a place to fill them up. This saves you about $5-10 bucks. It's ridiculous what they charge for water in the airport. I did end up buying us a soda water on the plane to share. G was very excited about the juice. He thinks soda water is juice and I am just going to let him continue thinking that. =)  

You can usually find a salad in the airport. I have gotten a side salad from McDonald's skipping the dressing. Quizno's had a salad that I just had them skip the dressing that seemed to be paleo approved. I do the best I can when I am traveling. If I end up with a little sugar in a dressing I let it go. I can't eat dairy at all, so I always skip anything that might have dairy. 

4) Dress in comfortable clothes and layers! Why is take off so hot and when you are in the sky it is so cold? I am usually sitting in the airplane sweating like crazy before we take off. Then we get in the sky and I am shivering because it is so cold.  I wore some looser fitting boyfriend jeans, tshirt, jacket and converse. I need something that I don't need to be adjusting and tugging on. 

I dress G in usually one of his favorite shirts. It helps getting dressed early in the AM. It also can be a conversation we can have while waiting. What is on your shirt, what color is that, etc? I also put on easy shoes for him. As soon as he is strapped in his seat I take his shoes off and put them in one of the bags. He is known for kicking his shoes off right away. I just take them off, so they don't get lost. 

5) I packed a rollerball with lavender this year! This was a great thing. I would roll some on the bottom of G's feet and the back of my neck. It really helped us stay relaxed. Early mornings, cramped space, and long travel days do not mix well with a toddler. Thankfully he slept for 3 hours on the first flight. Then we had a FOUR hour layover. It was either a four hour layover or an over night layover. I picked the 4 hour one! While I love Frontier's prices I do not like their flying times 90% of the time. We also don't have many options that fly into ND. 

When we would get on the plane I would roll some lavender on us. When we got to Denver I had him run as much as possible. We went up and down the moving walk ways. Up and down the escalators. He walked around looking at different planes. Whatever we could do to get out some energy. Using the tablet is not an option once we have landed. I will give him toys to play with while we watch planes. 

G really did well! He has been on planes often, so he knows the drill. It is getting easier now that is older too. A lot less to pack. No diapers or bottles. Smaller toys.

Menu August 20

I barely did any cooking while I was at my parents compared to my weekly routine when I am home. I cook 3 meals a day when I am home. We go out to eat maybe 3-4 times a month. I will say it was really nice to have a break from meal planning and cooking, but man is it hard to get back into it. At my parents we ate at least one meal a day at the my mom's restaurant when it was open. She is a seasonal business, so she is only open Wednesday through Sunday. 

I will say I ate more hamburgers in the month I was in ND than I eat in probably a full year. Hamburgers are something that are easy to get that are paleo approved. I just have to ask for a hamburger, no bun, tomato, lettuce and no cheese when I was there. Can you believe they don't bring tomato and lettuce with every burger? I found that so crazy! Hamburgers, steak and some salads I could make a few exceptions for to stick to paleo. The rest of the foods seemed to have some type of breading on them. 

A few days before I came home I ordered some food from Amazon Fresh to be delivered to the house. Art needed some food, so I added extra stuff that I knew I would like when I got home. The first day I was home I made a menu and grocery list. I ate a lot of fried tator tots. My mom had some gluten free ones. They were so yummy and just went so well with hamburgers!!! It was time to get back on track once we were home! I had joked we were going to need to detox once we were home. G ate so much junk. There were some things I would say he couldn't have, but I tried to just take a deep breath and let my family give him some treats. It isn't every day he eats these things. Once in awhile it will be ok. 

Here is the menu I put together for this week. 

Main Dishes:

Cracklin Chicken
Salmon
Zucchini Spaghetti
Beef & Broccoli
Breakfast
Taco Salad
Sausages

We have a TON of tomatoes right now. My mom made this really good tomato salad for her salad bar. I just had to take out the cheese. 

slice cherry tomatoes in 4's
dice an avocado 
drizzle olive oil over the top of them
mince 3 cloves of garlic 
mince fresh basil
mix all together, put in fridge for a few hours and serve cold
My mom added these little mozzarella cheeses to the salad. 

Sides:

Roasted broccoli
Baked potatoes
Coleslaw
BLT salad
Tomato salad - see above
Greek salad
Roasted veggies - zucchini, carrots, tomatoes, onions, peppers

Monday Thrive June 26


1) Holy bazooka we had one of the hottest weeks ever last week! It was AWFUL! We had days of high 90's to 100. We have a portable AC unit that we normally set up in our family room. Honestly we usually need this in August-October for a day here and there. We rarely run the thing. Well this year it was pulled out of storage in June! We decided to set it up in our bedroom this year. I am so glad we did! I would usually turn it on around nap time and leave it on until morning. It has kept our room cool. We have been able to sleep through this awful weather.

People in my area of Nor Cal don't handle the heat. We act like we are dying! People in the south roll their eyes at us whining. We don't have humidity or I might have packed my bags for Alaska. lol I spent most evenings in my room soaking in the AC. On a few occasions during this heat wave I brought different toys into our room to play with G. We also watched some movies from the Ipad. We also spent a lot of time in the pool. I have a nice tan which I am not complaining about. 

G had a great time dressing up his little guy in a knight, fireman, police man and other outfits. I was laughing to myself thinking G you probably won't ever understand the paper dolls I use to have. You had to fold the little tabs behind the doll with all the different outfits. Now they have magnetic ones where the outfits stay put. 





2) We bought this little car for Kaleb when he was about 9 months old about 4 years ago. He was starting to walk around furniture, so we thought he would like to push and ride on a car. This is the most used toy we have bought. Any kid that comes over has to drive it. Well Kaleb and G decided to drive it together the other day. Crazy kids! We bought it at Walmart for about $20. We've kept it as an inside toy. I would highly recommend this toy for anyone. It was well worth the $20 we spent! 



3) Did you see my skin care routine post that I posted last week? I shared the products I use for morning and evening skin care routine. I just ran out of my moisturizers a couple days after my post. I had them over 8 months! You don't have to switch over to everything all at one time. You can slowly add one product at a time as you run out of things. You can make the foaming face wash and buy the day cream to start. Your body and health deserve the very best! Do research to make sure you are using the safest things for your skin! Beauty products effect our health! 

4) Oh I found a Paleo pancake recipe that we all love!!! Thank you Pinterest!!! A couple weeks ago I decided I was going to try a new recipe every day until I found one that everyone would eat. I only had to try 2 recipes before I found one we all loved. Target had our favorite paleo pancake mix on sale, so I grabbed 2 of them to take to ND. I love this mix because all you need is water. This will work great for my sisters and parents house. I also thought about mixing all the dry ingredients in a baggy to take with us to ND of the recipe above. 

I have all the ingredients in the recipe on hand all the time. Arrowroot powder is a staple in my house along with coconut flour. These are not staples in peoples homes who do not eat paleo. lol I will grab a couple more packages of the premixed pancake mix for when we go on vacation later this year. Easy to throw in a suitcase to have for breakfast! We usually stay in a condo with a full kitchen. I end up cooking breakfast the majority of the time. 

5) I have been enjoying my 3 hours a day while G spent the past 2 weeks in school. It's amazing how much you can get accomplished in 3 hours alone. 

  • I have been going to hot yoga. I was concerned I wouldn't like it because the room is too hot. I actually LOVE it!!! When you come into the room it is a normal temperature. They heat the room slowly as you work out. I am planning a blog post on the different type of yoga classes I have tried. I have been so much more relaxed since I started doing yoga.
  • Painted all the trim in our hallway and caulk the trim. It looks sooooo much better! I need to work on the kitchen next. I am hoping to have this all completed before we leave for ND. 
  • I can run all my errands, grocery shop, doctor appointments, exercise all within 3 hours. It's amazing to me what I all get done. lol
I do feel every day preschool is too much for G. I am glad this fall he will go 2 days a week for 3 hours. I think that will be the perfect amount for him at this age. Mornings are also not his thing. The afternoon class will be perfect for him too. He doesn't like to wake up and go in the AM.

He is always so happy when I pick him up from school. He has been learning so much too! The other day Art went with us to drop him off. He was so proud to take his dad to his class. I will try to work it out next year for us to go to ND maybe the middle of June through July, so he can take 1 summer session of preschool late in July. We are all learning what works best with a growing little boy!

Weekly Menu - Paleo Friendly

I mainly use coconut oil or ghee for cooking. I buy both of them at Costco in bulk. The container of coconut oil lasts me a couple months and runs about $20. I use this to cook, take my make up off, lotion, bullet proof coffee and whatever else I might need to use an oil. It does take some getting use too. Art isn't a big fan when the coconut oil flavor is prominent. I have noticed if I use salt it helps to mask the flavor a lot. I honestly don't even notice it anymore. When other people use other types of oils to cook with I don't really like them now. I can taste the difference, but the coconut flavor doesn't other me. I love chicken fried in ghee! That is just the best taste to me.

Main Dishes:

Hamburgers - I love hamburgers on the grill. I bought some butter lettuce to wrap burgers in this week.

Shepherds pie - I will try to share the recipe I use for this. I buy some frozen veggies, make my own gravy, make some mash potatoes and throw it all in my cast iron skillet in the oven.

Cracklin Chicken - if you haven't tried Nom Nom Paleo's cracklin chicken you need too!!!!!!!!!!! It's the BEST!!!! Use some ghee to fry this chicken. Ok I am craving this now!

Buffalo Chicken Soup - this is a new recipe I want to try.

Chicken Curry - I haven't made curry in ages. I usually just throw in whatever veggies we have and put it over cauliflower rice.

Sausage - This is an easy meal. Throw some sausage on the grill!

Monday Thrive June 12

Happy Monday! Today G start's his first day of preschool! We are so excited! I can't wait to hear how much he loves his first day. I am sure I will pick up a crabby kid who has played like crazy and started learning new stuff already. I am planning to go to hot yoga today.

1) We have been on the hunt the past week to find a recipe for paleo pancakes. I buy the Birch Blender's Paleo Pancake Mix from Sprout's. We are going through a package a week. G has been on a pancake kick lately. I decided I needed to find a mix that would be a little cheaper to make. I don't have an issue buying the package for $5-6 when it lasts a month, but for each week I find it a little expensive. I am going through all the recipes I have pinned on Pinterest to try to find that we like just as much. When I find a winner I will let you know. Right now I haven't found one I like. G has been eating them with no problem. He is awfully picky these days, so I am glad he likes all my recipe testing. If anyone has a paleo pancake recipe they love let me know!

2) At the end of last summer I decided I was going to give up caffeine. I had read how it helped your adrenal glands if you don't have caffeine. I love coffee!!! I love the way it smells! I love the way it tastes with and without creamer. I drank half caff for a few months. Then I gave up caffeine completely earlier this year. I went from February through June with no caffeine or I would have a cup of green tea. The other day I decided to drink half caff again. I decided that was it. I am not giving up caffeine anymore. I need it in my life. Even a little bit of it. It just helps my mood. I am going to have 1-2 cups of half caff coffee each day. I REALLY love it with coconut milk.

I LOVE Aroy-D coconut milk. This is the thickest creamest coconut milk ever! I have tried a lot of different coconut milk over the past year. If you add this to coffee it is AMAZING! I have been known to bring my own coconut milk in a little container when I get a black cup of coffee.


3) I have started a new routine for G. We have to leave the house early to get him to preschool each morning. That means I need to have him up, fed, both of us ready and out the door by 7:50/8am. I have decided I like getting up a little earlier in the morning. I get more done. I don't feel like the day is as long if I get up before 7am. I know that is weird, but I just feel like the day goes by faster when it starts earlier. Maybe it's all those years of getting up early for work. Anyhow I set an alarm in my phone, so at a certain time every night the alarm goes off to give him a bath. He then gets 30-45 minutes after bath time to play or watch 1 show. Then we go to bed. I also limit the amount of time he sleeps during his nap. This seems to be working much better for us. The past year I haven't been strict with a schedule as I was when I worked.

4) We love potato salad around here. Art I think would eat it every day. Sometimes I am like I don't have time to make that stuff. Boiling potatoes, boiling eggs, peeling everything, waiting for it all to cool, mixing it up, letting it sit in the fridge. Ugh just typing that out sounds exhausting. Well Instant Pot to the rescue here folks! Put the metal rack on the bottom of your IP. Place your eggs on top. I usually do about 3-4 eggs. I use 2 eggs for the potato salad and have 2 deviled eggs for us. G LOVES deviled eggs. Then I peel my potatoes, cut them in chunks and place them in the IP. I then put the IP on high pressure for 5 minutes. I let it do it's thing. Once the timer goes off that it is done I release the pressure. While the pressure is releasing I get an ice bath ready for the eggs. I use my rubber gloves to pull out the eggs. I put the eggs in the ice bath while I use a spoon to remove the potatoes from the IP. I let the potatoes cool in the fridge. I slice up the eggs and add them to the potatoes. Then I mix in my mayo and other seasonings once the potatoes and egg have cooled. This really works great. In about 1 hour you can have potato salad. It's better if you make this around lunch time, so it can all cool for dinner. Or even the night before works best if you want it for lunch. To me it's just much easier and faster.

5) Last week Art and I went thrift shopping. I ended up really only looking in the kids section of clothing. G has had a growth spurt and a lot of things won't fit him for the fall. He has worn the same shorts for 2 seasons. The kid is so skinny he has been able to do that. I like to grab nice stuff when I find it at the thrift store. I bought all the items below for $30. I spent about $1.50-$2 per item. The one item I spent more on was a pair of Burberry jeans. They were in excellent condition for $11. I did check on Ebay what I could sell them for if I decided not to keep them for G. Everything I bought was Gap, Gymboree, Cherokee, Shaun White, Children's Place, Guess and Burberry. The black jeans I am not sure if they were even worn. They were in great condition. 

I would really like to buy the majority of his clothes from thrift stores going forward. It saves the environment and it saves a lot of money too. At this age he doesn't care where his clothes come from. I like him to wear nice clothes, but I don't ever spend a lot of money on clothes for him. I will spend more on a special outfit for Christmas, but it has to be a functional outfit he can wear more than just one time.

Weekly Menu - Paleo

Our menu this week is nothing fancy. Some weeks I just need something simple, easy and quick. It also depends on my mood when I am making my grocery list. If I am feeling lazy then the easy stuff gets put on the list. Apparently I was feeling extra lazy when I made this list.

Main Dishes:

Breakfast - I usually do eggs, bacon and my own version of breakfast potatoes. I will cut up potatoes and roast them. I have a paleo sausage gravy recipe to put over the potatoes I would like to try.

Pork loin - I buy these at Costco. I use my grandma's recipe for roast that is just amazing! I will have to share the recipe on here sometime in the near future.

Hot Dogs - these are my favorite hot dogs. I buy them from Amazon Fresh for $1-2 less than the price at Sprout's. These are really good flavor plus they don't have any garbage in them.

Fish - I make it different ways all the time. I will fry it with almond flour or bake it with lemons.

Pizza - I love to make this because we have lots of leftovers. It makes a big cookie sheet. There is plenty for dinner, Art's lunch, G lunch and some for the freezer. I love to have this in the freezer to grab if I need something for mine or G's lunch.

Taco Salads - I use whatever we have for this. Ground meat, cherry tomatoes, avocados, lettuce, Daiya cheese. It all depends what we have on hand and feel like eating on our taco salad. Gone are the days when Doritos use to be on top. lol I did find some plantain chips with a taco seasoning at Sprout's recently that were really good on top of the salad. I can't remember the brand of the chips. I will have to see if I can find them again.

Monday Thrive June 5

Happy Monday! 

1) This is our last week before preschool starts and vacations begin. G is enrolled in preschool for 2 days a week this fall. They suggested to enroll him in a session of summer school, so he would get use to things. Summer school is every day for 3 hours a day. I was hesitant to enroll him at first. Every day is a lot to me, but it is only for 4 weeks. Then we will be going to my parents for a month. When we come home we will have about a month before preschool starts up 2 days a week. 

I have plans to paint the trim in our house and go to hot yoga while he is in school every day. I am going to feel lost, so I felt I needed to find some activities to keep me busy. We will have our afternoons free to go to the zoo or other activities. I think we are both going to like the little change for a month.

2) Cinemark is offering $1 movies or $5 for 10 movies in select theaters near you. Click on the link to see if any movies are playing near you. G loves The Secret Life of Pets. They are playing that a couple times at different theaters new us this summer. I am planning to take him to a couple of these movies. I figure if he sits for 30 minutes for $2 it's no big deal. It will be something fun for us to do together and with friends. I am not sure how he will like a dark theater. 

3) Later this week I have a gift guide for Father's Day posts. My sister and I usually go in on a gift for our dad together. If you ask my mom what to get my dad she will say get him black jeans. If you ask my dad he will say DO NOT BUY ME BLACK JEANS I HAVE 100 PAIRS. It's a running joke between Lacey and I now. Hey it's dad's birthday do you want to buy the jeans or should I? He does have a ton of them! I need to figure out what to get him and have it sent, so it doesn't arrive 2 weeks after Father's Day. He is an easy person to buy for since he likes almost anything other than black jeans. lol

4) I recently read an article about a mother who started parenting like a Danish for a week. I really loved the article. I try to parent partially like this. I don't hover around G. I have always felt it was important that he should play independently. I also will let him run around the house without me following him around. I keep doors shut to rooms I feel he could get hurt or I put things up. I have noticed lately that he is playing better alone and his imagination is really growing. He was playing with his pets the other day with different voices pretending they were putting out fires. He is REALLY into fire trucks, fire poles, putting out fires etc. He still loves garbage trucks, but firemen/trucks are right up there with them now. What do you think of this article? 

5) Tomer Kosher recently sent me a variety pack of their beef jerky. I love jerky! The problem now that I am Paleo is trying to find jerky with ingredients that I don't cringe over or make me sick. They sent me the original, pepper, Cajun, hot and jalapeno. When I see hot jerky that is what I go for first. I love spicy things! My palette for spicy things is high I guess because this didn't seem hot to me at all. I have tried the original and Cajun. Art and I both really liked the Cajun. It has a kick to it! 

I really appreciate Tomer Kosher sending me the jerky. We have only ate 3 of them. I am trying to enjoy them as we eat them. lol I will purchase these in the future. These are something I would much rather my family eat then others on the market loaded with questionable ingredients. G loves jerky! Tomer Kosher mini beef sticks would be awesome because G would love them. =)
