I try to make something healthy, yummy and that both of us will eat. I also try to keep it under 500 calories.

I have leftovers in the freezer from last week. I will pull some of them out of the freezer for us to eat one evening. Probably on Friday, since that is the laziest night. I like to run my errands on Friday night and I don't like to spend a lot of time cooking.
We haven't been to the food trucks yet this year. We both have been wanting to go. I think I will just run a couple hundred miles, so I don't have to worry about the calories. =)

I got Ropa Vieja with white rice, platanos.
Braised Chicken Thights with Swiss Chard and Mashed potatoes and salad.
Plus, we're heading out of town this Thursday...so dinner out! ;-)

Monday night-prk sandwich for Dad-Me popcorn and peanut M&M's
Tuesday-sauasage and peppers with onions
Wed.-Cheese and crackers w ith salad
Thursday-I wish the food trucks-but maybe go to a truck stop
Friday-Sauerkraut and weiners
Sataurday-Some greasy grilled cheeese
Sunday-Cake
