Bread Pudding

I have never been a fan of bread pudding until this past weekend.  I dvr a Sandra Lee episode regarding bargain brunch recipes.  She made a bread pudding with ham pieces.  I had everything, so I tried it.  It is super delish!  I am trying to mix things up for our breakfast each week.

Bread Pudding Recipe

1 tablespoon canola oil
1 medium yellow onion, diced
3 sprigs fresh thyme, leaves only
Salt and freshly ground black pepper
1/2 cup shredded cheese
1 cup of ham pieces
6 pieces of bread
4 large eggs
2 cups milk

Directions:
Preheat the oven to 375 degrees F.
Cut all the bread into cubes. Put the bread in a 9 by 13-inch baking dish and add the onion, thyme, cheese and ham mixture. Toss together.

Whisk the eggs and the milk in a small bowl, and season with salt and pepper, to taste. Pour the egg mixture over the bread mixture and let it sit for 15 minutes. Bake until the top is golden brown and the middle is set, about 30 to 35 minutes. Remove from the oven and serve.

I have everything to make this and I am a huge fan of bread pudding...sothis will be on the menu today for your dad to have healthy breakfasts!!! He eats donuts and cookies...he is so bad!!! Love you! Mom
