I am traveling today, so I will not be posting a Menu Monday. At this point I don't even know what I will be cooking for the rest of the week.
Last week I made carb free pizza for dinner. I made eggplant pizzas and they were SUPER delish!
I sliced eggplant and grilled them. Then I spread tomato sauce, ground chicken, and cheese on the top. I baked them at 350 for 15-20 minutes. Oh they were delish! I can't wait to make them again!
