Krystal's Virtual Baby Shower - Cuban Mojito Cake

 My bestie Krystal is having a baby in May. I was asked to be part of her virtual baby shower and to make either a Filipino or Cuban dish.  I felt very honored to be part of this exciting virtual baby shower.  I poured over blogs and recipes trying to come up with something to make. I stumbled onto the Cuban Mojito Cake recipe and I knew it was perfect.

Krystal has decided to be team "green" and not find out the gender of little Cookie. What pregnant chicka doesn't love a sugary treat. I decided to go with green frosting to honor the unknown gender of Cookie!  By the way it has been KILLING me not knowing what Cookie is and I can't wait to get a message revealing cookie!




Cuban Mojito Cake

20 ounce can crushed pineapple, undrained
Juice of 1 lime
1 (1 lb.) box angel food cake mix
8 ounces reduced fat cream cheese, softened
1/4 cup limeade from concentrate
2-4 tablespoons powdered sugar — I used 2 tablespoons
1 teaspoon rum extract
8 ounce tub Cool Whip Lite
1/3 cup shredded sweetened coconut
Zest of lime

Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.

In a mixing bowl mix the pineapple, lime juice and cake mix together. Pour the mixture into the 9x13 pan and bake in the oven for about 25 minutes. Let cake completely cook in the pan.

In a mixing bowl beat together cream cheese and limeade concentrate. Add 2-4 tablespoons of powdered sugar depending on your desire for sweetness. Add rum extract and fold in cool whip. Spread frosting over the cake. Sprinkle with coconut and lime zest. I added 8 drops of green food coloring to turn the frosting green.

Yum!!!!!! Mojitos are one of my liquid poision drinks that I loved to enjoy pre-pregnancy, and I love that this is in cake form. Thanks again for participating alongsides the food celebrities!! You did fantastic!! XXOO

What a great idea for a cake! Team green is hard to cope with until D-day, seriously! I can't wait to find out Cookie's gender, either! :)

Mojito cake??? Genius!

I can't wait to find out Cookie's gender, as well. I originally was guessing boy, but just now, reading this post, girl popped into my head. Guess it's a 50/50 chance. :)
